- 3–4 Chicken Breasts
- 1 Packet Taco Seasoning
- 16 Ounces Salsa
- 15.25 oz. Can of Whole Kernel Corn, Drained
- 15.25 oz. Can of Black Beans, Drained and Rinsed
- 2 Cups Shredded Cheddar Cheese
- 2–3 Roma Tomatoes
- 2 Jalapeños
- About 11 oz. Tortilla Chips
Instructions
- Place chicken breasts in the crockpot.
- Sprinkle taco seasoning over chicken and pour salsa on top.
- Cover and cook on High for 3-4 hours or Low for 6-8 hours.
- Shred the chicken and stir it into the juices.
- Line a baking sheet with parchment paper and spread chips on it.
- Spoon the chicken mixture over the chips.
- Add corn and black beans, then sprinkle with cheese.
- Broil for 3-5 minutes until cheese is melted.
- Prepare fresh toppings while broiling.
- Remove from oven and add tomatoes and jalapeños on top.
- Serve with optional toppings like sour cream and guacamole.
Notes
Feel free to use chicken thighs for a different flavor and texture.
If using frozen chicken, adjust cooking time and ensure it reaches 165°F.
Custom toppings like olives or ranch dressing can be added to enhance flavor.
