Description

Savor the irresistible flavors of Set-It-and-Forget-It Crockpot Chicken Nachos. Tender chicken, zesty salsa, and gooey cheese create a comforting dish ideal for family dinners, game days, or late-night snacking!


Ingredients

  • 34 Chicken Breasts
  • 1 Packet Taco Seasoning
  • 16 Ounces Salsa
  • 15.25 oz. Can of Whole Kernel Corn, Drained
  • 15.25 oz. Can of Black Beans, Drained and Rinsed
  • 2 Cups Shredded Cheddar Cheese
  • 23 Roma Tomatoes
  • 2 Jalapeños
  • About 11 oz. Tortilla Chips

Instructions

  • Place chicken breasts in the crockpot.
  • Sprinkle taco seasoning over chicken and pour salsa on top.
  • Cover and cook on High for 3-4 hours or Low for 6-8 hours.
  • Shred the chicken and stir it into the juices.
  • Line a baking sheet with parchment paper and spread chips on it.
  • Spoon the chicken mixture over the chips.
  • Add corn and black beans, then sprinkle with cheese.
  • Broil for 3-5 minutes until cheese is melted.
  • Prepare fresh toppings while broiling.
  • Remove from oven and add tomatoes and jalapeños on top.
  • Serve with optional toppings like sour cream and guacamole.

Notes

Feel free to use chicken thighs for a different flavor and texture.
If using frozen chicken, adjust cooking time and ensure it reaches 165°F.
Custom toppings like olives or ranch dressing can be added to enhance flavor.
