Instructions
- Combine the onion, garlic, uncooked rice, sea salt, black pepper, and chicken broth in a slow cooker, stirring well.
- Place the chicken breasts into the rice mixture and drizzle with olive oil.
- Cover and cook on HIGH for 3 to 3.5 hours until the rice is tender and the chicken reaches an internal temperature of 165°F.
- Remove the chicken and let it rest before chopping it into bite-sized pieces.
- Blend the cottage cheese and other ingredients in a blender until smooth.
- Return the chopped chicken to the slow cooker, add the broccoli florets, and stir in the blended cottage cheese mixture. Sprinkle with cheddar cheese on top.
- Cover and cook for an additional 15 to 20 minutes until the broccoli is tender and the cheese is melted.
