Description

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup pickle relish
  • 1/4 cup ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp sugar
  • 1 tbsp white vinegar
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 8 flour tortillas (6 inches)
  • 1 lb lean ground beef
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp neutral oil
  • 4 slices American cheese
  • 1/2 cup diced onion
  • 1/2 cup dill pickle chips
  • 2 cups shredded iceberg lettuce

Instructions

  • Mix the Sauce: Combine mayonnaise, pickle relish, ketchup, dijon mustard, sugar, white vinegar, paprika, onion powder, and garlic powder in a bowl and set aside.
  • Prepare the Beef: Divide ground beef into 4 equal portions and form into balls.
  • Spread the Beef: Spread one portion of beef evenly over each tortilla and season with salt and pepper.
  • Heat the Skillet: Preheat skillet or griddle with neutral oil over medium-high heat.
  • Cook the Tacos: Place tortilla with beef side down, press gently, and cook until golden brown for 2-3 minutes.
  • Flip and Add Cheese: Flip the taco, add a slice of cheese, and cook until cheese melts and tortilla edges are golden.
  • Repeat for Remaining Tacos: Continue cooking the remaining tacos and let them rest on a plate.
  • Dress and Serve: Top with sauce, lettuce, diced onion, and pickles to serve.

Notes

For a lighter version, substitute mayonnaise with Greek yogurt in the sauce.
