Description

Ingredients

  • 1 ¼ cup (272g) granulated sugar
  • 2 tablespoons lemon zest (from about 2 lemons)
  • ¾ cup unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 2 tablespoons lemon juice
  • 2 large eggs
  • 1 ¼ cup all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¾ cup (113g) white chocolate (roughly chopped)
  • 2 tablespoons lemon juice
  • ¼ teaspoon lemon extract
  • Pinch kosher salt
  • 1 tablespoon lemon zest (for garnish)

Instructions

  1. Preheat the oven to 350℉. Prepare an 8×8 inch pan by greasing and lining it with parchment paper, ensuring the parchment hangs over the edges.
  2. In a large mixing bowl, combine sugar and lemon zest. Rub the zest into the sugar to release oils, enhancing the lemon flavor.
  3. Add softened butter, lemon extract, and vanilla extract. Beat on medium speed until the mixture is fluffy.
  4. Incorporate lemon juice and eggs, beating quickly until smooth and combined.
  5. Gradually add flour, baking powder, and salt. Mix on low speed until just combined. Pour the batter into the prepared baking dish and bake for 25 minutes, until golden and a toothpick comes out clean. Let cool for 15 minutes.
  6. For the white chocolate lemon glaze, melt white chocolate and lemon juice in a small bowl in the microwave, stirring until glossy. (Alternatively, use a double boiler.) Stir in lemon extract and salt.
  7. Drizzle the white chocolate glaze over the cooled brownies, ensuring full coverage, and garnish with lemon zest. Let the glaze set for at least 20 minutes before slicing.
