Description

This dish of soft scrambled eggs with smoked salmon and chives on toast or a bagel is a delightful treat filled with rich flavors and creamy textures. Perfect for a quick brunch, it’s easy to make and satisfying for any palate!


Ingredients

Scale
  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • In a bowl, whisk together the eggs and milk (or cream), seasoning with salt and pepper.
  • Pour the egg mixture into the pan with melted butter. Gently scramble, cooking slowly and stirring occasionally until soft curds form but the eggs are not fully set.
  • Add in the smoked salmon, continuing to scramble until eggs are just set but remain moist and soft.
  • Garnish with chives and serve directly from the pan or on two plates.

Notes

For a richer flavor, use cream instead of milk.
Adjust seasoning as needed since smoked salmon can be salty.
Serve immediately for the best texture.
