- 4 large eggs
- 2 tablespoons milk or cream
- Salt & pepper to taste
- 2 ounces smoked salmon
- chopped chives for garnish
Instructions
- Melt the butter in a nonstick pan over medium heat.
- In a bowl, whisk together the eggs and milk (or cream), seasoning with salt and pepper.
- Pour the egg mixture into the pan with melted butter. Gently scramble, cooking slowly and stirring occasionally until soft curds form but the eggs are not fully set.
- Add in the smoked salmon, continuing to scramble until eggs are just set but remain moist and soft.
- Garnish with chives and serve directly from the pan or on two plates.
Notes
For a richer flavor, use cream instead of milk.
Adjust seasoning as needed since smoked salmon can be salty.
