- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1.5 teaspoons ground ginger
- 1.5 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2/3 cup unsulphured or dark molasses
- 3/4 cup hot water
- 1/2 cup unsalted butter
- 1/3 cup light or dark brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar
- 2–3 tablespoons orange juice
Instructions
- Preheat the oven to 350°F (177°C) and grease a loaf pan.
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, salt, and pepper.
- In another bowl, mix molasses with hot water until dissolved.
- Cream butter and brown sugar in a mixing bowl until fluffy.
- Add egg and vanilla, mix until combined.
- Gradually add dry ingredients alternating with molasses mixture until just combined.
- Pour batter into the prepared loaf pan and bake for 50 to 60 minutes.
- Cool for 10 minutes, then turn out onto a wire rack and glaze with orange juice and confectioners' sugar.
Notes
Batter should have small lumps; do not over-mix.
Use room temperature butter and eggs for better mixing.
Store wrapped for up to 3 days or freeze for longer storage.
