Description

These Strawberry Swirl Marshmallows boast a sweet strawberry flavor and a fluffy texture that’s hard to resist. Simple ingredients and easy preparation make them a hit for any gathering or homemade treat.


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • Combine unflavored gelatin and 1/2 cup water in a small bowl and let bloom.
  • In a large saucepan, mix sugar, corn syrup, remaining water, and salt. Heat to 240°F.
  • Stir in strawberry jello until well mixed.
  • Transfer bloomed gelatin to a stand mixer bowl and pour hot sugar syrup slowly into it to help dissolve gelatin.
  • Whip the mixture with a whisk attachment for 8 to 10 minutes until fluffy and stiff.
  • Prepare an 8×8 inch square pan by lightly spraying it with nonstick spray.
  • Mix powdered sugar and cornstarch in a small bowl, reserving half for later use.
  • Dust the greased pan with the powdered sugar and cornstarch mixture.
  • Add strawberry extract and food coloring in the last minute of whipping, then continue to beat.
  • Pour the marshmallow mixture into the prepared pan.
  • For a red swirl, add 1 to 2 drops of food coloring on either side and swirl with a skewer.
  • Sprinkle the remaining powdered sugar/cornstarch on top and spread evenly over marshmallows.
  • Let the marshmallows rest for at least 4 hours; overnight is ideal.
  • Cut marshmallows into 12 pieces with a sharp knife or pizza cutter.
  • If sticky, dust the knife with the powdered sugar/cornstarch mixture before cutting.
  • Toss the marshmallows in additional powdered sugar to prevent stickiness.

Notes

Make sure to let the marshmallows sit for at least 4 hours to reach the ideal texture.
Store marshmallows in an airtight container to keep them fresh and fluffy.
Feel free to experiment with different flavors of jello for unique twists.
