Description

  • 1 cup Granulated Sugar
  • 1 cup Unsalted Butter (softened)
  • 1 large Egg (room temperature)
  • 1 tbsp Vanilla Bean Paste
  • 1 tsp Orange Zest
  • ~1/4 cup Plum Jam
  • 1/2 cup Pink Sparkling Sugar (for rolling)
  • heaping 1/2 cup Freeze-Dried Berries (for frosting)
  • 2 cups Powdered Sugar
  • 34 tbsp Heavy Cream

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  • Beat softened butter and sugar until light and fluffy, about 1-2 minutes.
  • Add egg, vanilla bean paste, and orange zest to the butter-sugar mixture; mix until fluffy.
  • Gradually incorporate dry ingredients into wet ingredients; do not overmix.
  • Form dough balls, placing plum jam in the center, seal, and roll in pink sugar.
  • Space dough balls on baking sheets, flatten slightly, and bake for 9-10 minutes.
  • Cool on baking sheets for 5 minutes, then transfer to a cooling rack.
  • Prepare the frosting by processing freeze-dried berries, then mixing with butter, powdered sugar, and cream until fluffy.
  • Pipe the frosting onto cooled cookies and add sprinkles if desired.

Notes

Store cookies at room temperature in an airtight container for up to 5 days or refrigerate for a week.
Cookies can be frozen for up to 3 months, thawing overnight in the refrigerator before baking.
