Ingredients

  • 450 g rotini pasta
  • 450 g broccoli
  • 80 g red onion
  • 225 g cooked bacon
  • 2 teaspoons salt
  • 480 ml mayonnaise
  • 120 ml red wine vinegar
  • 100 g granulated sugar
  • 1 teaspoon ground black pepper

Instructions

  • Prepare a large pot of salted water and boil.
  • Cook rotini pasta until al dente; drain and cool slightly.
  • Wash and chop broccoli into small florets.
  • Finely dice red onion.
  • Crumble bacon into bite-sized pieces.
  • Mix mayonnaise, red wine vinegar, sugar, salt, and black pepper in a bowl until creamy.
  • Toss cooled pasta with broccoli and onion; pour over dressing.
  • Mix gently to combine and refrigerate for at least 3 hours.
  • Before serving, top with crumbled bacon.

Notes

For a gluten-free option, use gluten-free rotini pasta.
To make it vegetarian, substitute bacon with crispy chickpeas or sunflower seeds.
