- 2 lbs potatoes
- 1 cup sour cream
- 1/2 cup cream cheese
- 1 cup cheddar cheese, shredded
- 1/2 cup green onions, chopped
- 1/2 cup bacon, cooked and crumbled

Instructions
- Preheat your oven to 375°F (190°C).
- Wash and peel the potatoes, then dice them into cubes.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add sour cream, cream cheese, half of the cheddar cheese, green onions, and half of the bacon to the pot.
- Mash the mixture until smooth and creamy, then season with salt and pepper.
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese and bacon on top.
- Bake in the preheated oven for 25-30 minutes until golden and bubbly.
