Description

Twice Baked Potato Casserole is a creamy, cheesy delight that combines tender potatoes, savory bacon, and melted cheese. Perfect for a quick dinner or comfort food craving, this dish delivers irresistible flavors without hassle.


Ingredients

  • 2 lbs potatoes
  • 1 cup sour cream
  • 1/2 cup cream cheese
  • 1 cup cheddar cheese, shredded
  • 1/2 cup green onions, chopped
  • 1/2 cup bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the potatoes, then dice them into cubes.
  3. Boil the potatoes in salted water until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot.
  5. Add sour cream, cream cheese, half of the cheddar cheese, green onions, and half of the bacon to the pot.
  6. Mash the mixture until smooth and creamy, then season with salt and pepper.
  7. Transfer the mixture to a greased baking dish and spread evenly.
  8. Sprinkle the remaining cheddar cheese and bacon on top.
  9. Bake in the preheated oven for 25-30 minutes until golden and bubbly.
