Ingredients

  • 2–3 tablespoons honey
  • 1 teaspoon active dry yeast
  • 3 cups bread flour or all-purpose flour

  • 1 teaspoon ground cinnamon

  • ½–¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  • Combine water and honey in a bowl, sprinkle yeast, and let sit until bubbly (5-10 mins).
  • Whisk together flour, salt, cinnamon, cranberries, raisins, and walnuts in a separate bowl.
  • Mix the yeast mixture with the dry ingredients until just incorporated.
  • Cover the dough and let it rise for 8-10 hours at room temperature.
  • Shape the dough into a ball, place it seam-side down in a floured bowl, and refrigerate overnight.
  • Preheat the Dutch oven to 450°F (232°C).
  • Remove chilled dough, shape it, and score the top with a knife.
  • Bake covered for 30 minutes, then uncover and bake for an additional 15–20 minutes until golden brown.
  • Cool the bread on a wire rack before slicing.
