Description

These Valentine Homemade Caramels are made with rich butter, sugars, and cream for a melt-in-your-mouth treat. Perfect for gifting or indulgent snacking! Easy to make and simply delicious, they’re ideal for Valentines or any sweet occasion.


Ingredients

  • 1 cup + 1 tbsp Butter
  • 1 1/4 cups Sugar
  • 1 1/4 cups Brown Sugar
  • 1 cup Corn Syrup
  • 2 cups Heavy Whipping Cream
  • 1 tsp Vanilla

Instructions

  • Prepare a baking pan by lining it with foil and greasing with butter.
  • In a saucepan over medium heat, mix butter, granulated sugar, brown sugar, corn syrup, and 1 cup of cream. Stir until dissolved.
  • Bring the mixture to a gentle boil, then gradually add the remaining cream.
  • Cook until the candy thermometer reads 240°F, which is the soft ball stage.
  • Remove from heat and stir in vanilla extract before pouring into the prepared pan.
  • Allow cooling at room temperature until firm, usually a few hours or overnight.
  • Lift out, cut into pieces, and wrap for serving.

Notes

Ensure all sugar is fully dissolved before heating to prevent crystallization.
Use a heavy saucepan for even cooking and to avoid hotspots.
If caramels turn out too soft, cook them longer next time.
