- 15.25 ounce strawberry cake mix
- 8 ounce block cream cheese, softened to room temperature
- â…“ cup cream cheese chips, roughly chopped
- 2 10 oz bags Ghirardelli vanilla melting wafers
- ½ cup Wilton pink candy melts
- ½ cup Wilton bright pink candy melts
- Sprinkles (optional)
Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper. Heat treat the cake mix by spreading it on the sheet and baking for 5 minutes. Allow to cool on a wire rack.
- In a mixing bowl, beat softened cream cheese with a hand mixer on medium-high speed until smooth and creamy.
- Fold cooled cake mix into the cream cheese, then mix until combined and a dough consistency forms. Please remember to fold initially to avoid a flour mess.
- Gently mix in cream cheese chips until evenly distributed.
- Cover dough with plastic wrap and chill in the refrigerator for 2 hours.
- Prepare two baking sheets with parchment paper. Use a cookie scoop to portion dough and roll into smooth balls. Allow them to sit for 15 minutes to prevent cracking later.
- Melt vanilla melting wafers using a double boiler or microwave until smooth. Dip each dough ball fully in the melted wafers, tap off excess, and place on lined sheets. Add sprinkles to half of the coated balls before the coating hardens.
- Melt the pink candy melts in piping bags in the microwave until fully liquefied. Drizzle this melted candy over the remaining coated cake balls.
- Allow truffles to set completely before serving.
Notes
For best results, make sure the cream cheese is fully softened before mixing.
Chilling the dough is crucial for the right texture and preventing cracks in the coating.
