- 16 oz pasta, cooked
- 1 cup unsalted cashews, soaked
- ¼ cup vegan butter, divided
- â…“ cup yellow onion, diced
- 3 garlic cloves, minced
- ½ tsp smoked paprika
- 2 cups almond milk or milk of choice
- ½ cup + 2 tbsp nutritional yeast
- ½ tsp salt, plus more to taste
- ¼ tsp red pepper flakes
- 3 tbsp panko breadcrumbs, optional
Instructions
- Cook pasta until al dente and drain.
- Soak cashews in hot water for 15 minutes.
- Sauté onion and garlic in vegan butter until fragrant.
- Blend drained cashews with onion, garlic, smoked paprika, almond milk, nutritional yeast, and salt until smooth.
- Combine cooked pasta with the creamy sauce, adjusting consistency with more almond milk if needed.
- Preheat oven to 350°F (175°C) and transfer mixture to a greased baking dish.
- Top with panko breadcrumbs and melted vegan butter if desired.
- Bake for 15-20 minutes until golden and bubbling.
Notes
Use gluten-free pasta if needed.
For extra creaminess, add more almond milk as required.
