Ingredients

  • 16 oz pasta, cooked
  • 1 cup unsalted cashews, soaked
  • ¼ cup vegan butter, divided
  • â…“ cup yellow onion, diced
  • 3 garlic cloves, minced
  • ½ tsp smoked paprika
  • 2 cups almond milk or milk of choice
  • ½ cup + 2 tbsp nutritional yeast
  • ½ tsp salt, plus more to taste
  • ¼ tsp red pepper flakes
  • 3 tbsp panko breadcrumbs, optional

Instructions

  • Cook pasta until al dente and drain.
  • Soak cashews in hot water for 15 minutes.
  • Sauté onion and garlic in vegan butter until fragrant.
  • Blend drained cashews with onion, garlic, smoked paprika, almond milk, nutritional yeast, and salt until smooth.
  • Combine cooked pasta with the creamy sauce, adjusting consistency with more almond milk if needed.
  • Preheat oven to 350°F (175°C) and transfer mixture to a greased baking dish.
  • Top with panko breadcrumbs and melted vegan butter if desired.
  • Bake for 15-20 minutes until golden and bubbling.

Notes

Use gluten-free pasta if needed.
For extra creaminess, add more almond milk as required.
