Description

This White Chocolate Raspberry Mousse is irresistible with its creamy texture and vibrant flavor from fresh raspberries. Quick to prepare and perfect for impressing guests or enjoying a delightful treat at home.


Ingredients

  • 1/4 cup (60 ml) whipping cream or heavy cream
  • 4 ounces (112 grams) full-fat cream cheese
  • 1/3 cup (56 grams) white chocolate chopped and melted
  • 1/2 cup (120 grams) plain greek yogurt
  • 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
  • fresh raspberries for garnish, optional

Instructions

  • In a small bowl, beat the cream using an electric mixer until stiff peaks form, taking care not to overmix.
  • In a separate medium bowl, mix the cream cheese and melted white chocolate with the same beaters until smooth. Add the Greek yogurt and stir to combine, then fold in the mashed raspberries.
  • Gently fold in all but one tablespoon of the whipped cream, keeping the mixture light.
  • Spoon the mousse into two serving glasses. It can be served immediately or chilled in the fridge for up to eight hours for a mousse-like texture.
  • Top with the reserved cream and garnish with fresh raspberries, if desired.

Notes

Use room temperature cream cheese for easier mixing.
Chill the mousse to enhance its texture and flavor.
Feel free to adjust the sweetness by adding a bit of sugar if desired.
