- 2 cups all purpose flour
- 1 cup unsalted butter room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest optional
- 1 cup fresh blueberries
Instructions
- In a medium bowl, mix the flour, salt, and powdered sugar. Cut in the butter until the mixture is crumbly.
- Preheat the oven and grease a 9×13 inch baking pan. Firmly press the crust mixture into the bottom of the pan.
- Bake the crust for 18-20 minutes until it's light golden brown, then let it cool.
- In another bowl, whisk the eggs, then add sugar and flour, mixing well. Stir in lemon juice and optional lemon zest.
- Pour the egg mixture over the cooled crust, spreading the blueberries evenly on top.
- Bake again for 20-25 minutes until the top is lightly golden. Let cool on a wire rack.
- Chill in the refrigerator for at least 2 hours before slicing and serving.
Notes
Optional lemon zest adds an extra layer of citrus flavor.
For best results, use fresh blueberries when in season.
These bars can be stored in the refrigerator for up to a week.
