Description

Butter Pecan Melt-Away Cookies are delightful treats featuring the rich flavor of pecans and a melt-in-your-mouth texture. Easy to prepare, these cookies are perfect for gatherings or a sweet snack at home.

Ingredients

Scale
  • 1 ½ cups (163.5 g) chopped pecans, (roasted*, cooled, divided)
  • 1 cup (2 sticks / 227 g) unsalted butter, (cold, cubed)
  • 1 cup (200 g) granulated sugar
  • ½ cup (100 g) brown sugar, (lightly packed)
  • 2 large eggs, (room temperature)
  • 1 tablespoon vanilla extract
  • 2 ½ cups (312 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350ºF and line baking sheets with parchment paper.
  2. In a stand mixer bowl, combine the cold butter, granulated sugar, and brown sugar. Beat on medium speed until light and creamy, about 2-3 minutes.
  3. Add the eggs one at a time with the mixer on low speed. Once incorporated, mix in the vanilla and scrape the bowl as needed.
  4. In a medium bowl, whisk together the flour, baking soda, and salt.
  5. With the mixer off, add the dry ingredients to the butter mixture and mix on low speed until just combined.
  6. Stir in 1 cup of pecans, keeping the rest for topping.
  7. Using a 2-tablespoon scoop, drop dough onto the lined baking sheets, placing them about 2 inches apart. Top each cookie with a few pecan pieces.
  8. Bake for 10-12 minutes or until set. The cookies will be puffy and not appear wet.

Notes

Using room temperature eggs helps create a better texture.
Store cookies in an airtight container to keep them fresh for several days.
For added flavor, consider toasting the pecans before mixing.
