Description

These Chicken Pineapple Kebabs are packed with flavor and are simple to prepare. Juicy chicken, sweet pineapple, and colorful peppers make this dish a quick and healthy option for any meal.


Ingredients

  • â…“ cup soy sauce
  • â…“ cup canned pineapple juice
  • 2 tablespoons lime juice
  • ¼ cup packed light brown sugar
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons sesame oil
  • 2 teaspoons chipotle chili pepper powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound boneless skinless chicken breast
  • 1 pineapple
  • 3 bell peppers
  • 1 large red onion
  • fresh chopped cilantro
  • lime wedges

Instructions

  1. Whisk together soy sauce, pineapple juice, lime juice, brown sugar, olive oil, sesame oil, chipotle chili powder, garlic powder, salt, and pepper in a medium bowl.
  2. Add chicken to marinade, cover, and refrigerate for at least 30 minutes, up to overnight.
  3. Preheat grill or oven to 400°F.
  4. Thread marinated chicken, pineapple, peppers, and onions onto skewers and place on a platter.
  5. Cook kebabs by grilling for 15–20 minutes, turning every 5 minutes, or bake for 15–20 minutes until chicken reaches 165°F.
  6. Serve kebabs with chopped cilantro and lime wedges.

Notes

For a more intense flavor, marinate the chicken overnight.
Adjust the heat by adding more or less chipotle chili pepper powder according to your taste.
Feel free to add other vegetables like zucchini or mushrooms to the skewers.
