Description

Savor the flavors of Chicken Ranch Pasta Salad, featuring tender rotini pasta, crispy bacon, and fresh veggies, perfect for a quick dinner or a healthy meal!


Ingredients

  • 3 cups uncooked fusilli or rotini pasta
  • 5 strips bacon cut into small pieces
  • 1/2 medium red onion chopped
  • 2 cups shredded cooked/rotisserie chicken
  • 2 cups grape or cherry tomatoes cut into halves
  • 1/2 cup ranch dressing
  • Fresh parsley chopped, to taste (optional)

Instructions

  1. Prepare ranch dressing in advance, if needed, and refrigerate until ready to use.
  2. Boil salted water in a large pot, cook pasta according to package instructions, then rinse under cool water and drain thoroughly.
  3. Cut bacon into small pieces and cook until crispy; place on a paper towel-lined plate to drain excess fat.
  4. Chop onion, chicken, tomatoes, and parsley (if using) and add to a large salad bowl. Include the pasta and bacon once they're ready.
  5. Toss the mixture with ranch dressing, starting with 1/2 cup and adding more to taste. Season with salt and pepper as desired. Serve immediately or refrigerate before serving.

Notes

Using rotisserie chicken saves time; feel free to make your own if preferred.
You can customize the salad with additional veggies or herbs according to your taste.
