Description

  • 3 large very ripe bananas (mashed)
  • 1/2 cup butter (melted)
  • 1 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 teaspoon sea salt
  • 1/2 cup sour cream (room temperature)
  • 1 teaspoon baking soda
  • 1 3/4 cups all-purpose flour
  • 4 oz semi-sweet chocolate chunks
  • 2 oz chopped walnuts
  • 2 oz white chocolate chunks or chips

Instructions

  1. Preheat the oven to 350°F. Grease a 10×5 loaf pan and lightly dust with flour to avoid sticking.
  2. In a large bowl, mash the bananas until smooth and creamy.
  3. In a separate bowl, whisk the melted butter and sugar until combined. Add the eggs and vanilla extract, and whisk until smooth.
  4. Stir in the mashed bananas, sour cream, sea salt, and baking soda until fully incorporated.
  5. Add the flour and cinnamon, then mix gently until just combined to avoid overmixing.
  6. Fold in the semi-sweet chocolate chunks, walnuts, and white chocolate chunks, reserving some for garnish if desired.
  7. Pour the batter into the prepared loaf pan. Top with extra chocolate chunks and walnuts, if using.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Let cool before slicing.

Notes

Make sure bananas are very ripe for the best flavor.
Cover with tin foil during the last baking stage to prevent over-browning.
Can be stored in an airtight container for several days for fresh enjoyment.
