Description

This Chocolate Zucchini Cake is a deliciously moist dessert combining the richness of chocolate with the subtle sweetness of zucchini, making it an irresistible treat. Easy to prepare and full of flavor, it’s perfect for satisfying your sweet tooth while using up garden zucchini!

  • 1 ¾ cups (217g) all-purpose flour
  • ½ cup (40g) natural unsweetened cocoa powder
  • ½ teaspoon salt
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup (200g) lightly packed brown sugar
  • ¾ cup (150g) granulated sugar
  • 2 cups (220g) shredded zucchini
  • ¼ cup (20g) natural unsweetened cocoa powder
  • 2 cups (226g) powdered sugar
  • Pinch of salt
  • ½ cup (113g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 tablespoons heavy whipping cream

Instructions

  1. Preheat the oven to 350°F and prepare a 9×13-inch rectangular cake pan by greasing and flouring it or using nonstick baking spray.
  2. In a medium bowl, combine the flour, cocoa powder, baking powder, baking soda, cinnamon, and salt. Whisk together and set aside.
  3. In a large bowl, beat the eggs and then add in the vegetable oil, vanilla extract, brown sugar, and granulated sugar. Whisk until the mixture is smooth and well blended.
  4. Gradually add the dry mixture to the wet mixture, stirring with a spatula until just combined. Fold in the shredded zucchini until evenly distributed.
  5. Pour the batter into the prepared cake pan and spread it evenly. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and the cake springs back when gently pressed.
  6. Allow the cake to cool completely before frosting and serving.
