Ingredients

  • 3 tablespoons butter
  • 2 cloves garlic, finely chopped
  • 1 pound gnocchi, uncooked
  • ¼ cup sun-dried tomatoes, chopped
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper or to taste
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup heavy cream
  • ½ cup vegetable stock
  • ¼ cup parmesan cheese, grated
  • 3 cups baby spinach
  • 2 tablespoons fresh basil, finely sliced

Instructions

  • Melt butter in a large skillet over medium-high heat.
  • Add garlic and gnocchi, sauté until golden brown for about 5 minutes.
  • Stir in sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and pepper; cook for another 2-3 minutes.
  • Pour in heavy cream, vegetable stock, and Parmesan. Stir and simmer until sauce thickens.
  • Add baby spinach and cook until wilted, about 1 minute.
  • Garnish with fresh basil and serve immediately.

Notes

Leftover gnocchi can be stored in an airtight container in the refrigerator for up to 3 days.
For freezing, use a freezer-safe container; will last up to 3 months.
Add a splash of cream or stock when reheating if the sauce thickens too much.
