- ¼ teaspoon ground black pepper
- 1 cup heavy cream
- ½ cup vegetable stock
- ¼ cup parmesan cheese, grated
- 3 cups baby spinach
- 2 tablespoons fresh basil, finely sliced
Instructions
- Melt butter in a large skillet over medium-high heat.
- Add garlic and gnocchi, sauté until golden brown for about 5 minutes.
- Stir in sun-dried tomatoes, Italian seasoning, crushed red pepper, salt, and pepper; cook for another 2-3 minutes.
- Pour in heavy cream, vegetable stock, and Parmesan. Stir and simmer until sauce thickens.
- Add baby spinach and cook until wilted, about 1 minute.
- Garnish with fresh basil and serve immediately.
Notes
Leftover gnocchi can be stored in an airtight container in the refrigerator for up to 3 days.
For freezing, use a freezer-safe container; will last up to 3 months.
Add a splash of cream or stock when reheating if the sauce thickens too much.
