  • 1 ½ cups diced mango
  • 1 shallot diced
  • 1 jalapeno pepper seeded and diced
  • â…“ cup chopped cilantro
  • 2 to 3 tablespoons fresh lime juice
  • kosher salt and pepper
  • 1 14 ounce can black beans, drained and rinsed
  • ½ teaspoon smoked paprika
  • ÂĽ teaspoon ground cumin
  • ÂĽ teaspoon garlic powder
  • 1 cup freshly grated monterey jack cheese
  • oil or butter for cooking
  • 8 to 12 small fajita-size flour tortillas

Instructions

  1. In a bowl, mix diced mango, shallot, jalapeno, cilantro, lime juice, salt, and pepper. Toss well and refrigerate if making ahead.
  2. Mash black beans in a bowl with salt, pepper, smoked paprika, cumin, and garlic. Ensure some beans remain whole for texture.
  3. Heat a nonstick skillet over medium heat and add the seasoned black beans. Cook until warmed and crisped at the edges, then sprinkle cheese on top to melt.
  4. Transfer the black beans to a plate.
  5. For each taco, add a drop of oil or butter to the skillet, sprinkle cheese on one side of a tortilla, and add some black beans. Fold and cook until both sides are golden and cheese melts.
  6. Serve warm with the mango salsa on the side.

Notes

The mango salsa can be prepared a few hours in advance for convenience.
For additional heat, keep some seeds from the jalapeno pepper or add more to taste.
Feel free to swap in your favorite cheese for a personalized touch.
