- 350 g hulled strawberries
- 50 g granulated sugar (¼ cup)
- 12 g cornstarch (1 ½ tablespoon)

Instructions
- In a large bowl, whisk together flour, sugar, and salt.
- Incorporate cold butter, using a pastry blender or two forks to cut it into the flour mixture until it resembles coarse sand.
- Mix in egg yolks and ice water with a spatula until the mixture resembles a shaggy mess.
- Transfer the mixture to a clean work surface and gently knead until the dough comes together.
- Divide the dough into two equal portions, flatten into disks, and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes, or store for up to 2 days.
- This recipe produces two pie doughs – use one for this galette and freeze the other for later.
