Ingredients
Scale
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 yellow onions, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 2 teaspoons dijon mustard
- 1 tablespoon balsamic vinegar
- 1 1/2 lbs grass-fed 85/15 ground beef
- 1 tablespoon worcestershire
- 1 tablespoon dijon mustard
- 1 tablespoon dehydrated minced onions
- 1 1/2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 brioche buns, toasted in butter
- 8 oz double cream brie, cut into slices
- 2 cups arugula
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1 tablespoon dijon mustard
- 1 teaspoon honey
Instructions
- Caramelize the onions by melting the butter and olive oil in a large dutch oven over medium heat. Add onions and cover, cooking for 10 minutes. Remove the lid, lower heat, and add thyme, salt, and pepper. Cook until deeply caramelized. Stir in dijon and balsamic, then set aside.
- Prepare the hamburger mixture by finely chopping half of the cooled caramelized onions and mix them with ground beef, Worcestershire, dijon, dehydrated onion, garlic powder, salt, and pepper in a bowl. Shape into 4 patties, about 1 inch thick.
- Make the burger sauce by mixing mayonnaise, dijon, horseradish, and honey in a small bowl; season with salt and pepper.
- Preheat your grill to 450°F and prepare the grates by cleaning and lightly oiling them.
- Grill the burgers for 3-4 minutes on each side. Remove from grill, let rest, and top with slices of brie.
- Assemble burgers by spreading sauce on toasted buns, adding burger patties, the remaining caramelized onion, and topping with arugula. Serve immediately.
Notes
For best results, allow the onions to caramelize slowly for maximum flavor.
Brioche buns add a nice touch, but any soft burger bun will work.
Feel free to customize toppings to your liking, such as adding pickles or tomatoes.
