- 2 tablespoons butter
- 4 yellow onions, thinly sliced
- 4 cloves garlic, minced
- 4 1/2 cups beef broth
- 1 pound shell pasta
- 1 teaspoon dried thyme
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- Salt & pepper to taste
- 1/4 cup fresh parsley, finely chopped, for garnish
Instructions
- Heat olive oil and butter in a large skillet over low heat.
- Add onions and salt, cooking for 25-30 minutes until caramelized.
- Stir in minced garlic for about 1 minute until fragrant.
- Pour in remaining beef broth, add shell pasta and thyme, and simmer for 10-15 minutes.
- Mix in heavy cream and Parmesan cheese until creamy and heated through.
- Garnish with fresh parsley before serving.
Notes
For a vegetarian option, substitute beef broth with vegetable stock.
