- 1 teaspoon dried thyme

- 4 pounds bone-in skin on chicken thighs
Instructions
- In a large bowl, combine the marinade ingredients: olive oil, lemon juice, lemon zest, shallot, garlic, dijon mustard, oregano, salt, thyme, paprika, and pepper.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 24 hours for better flavor.
- Preheat your oven to 400°F (200°C).
- Place the marinated chicken thighs in a baking dish. Pour the remaining marinade over them. Cover the dish with foil and bake for 45 to 55 minutes, or until the internal temperature reaches 165°F (74°C).
- After cooking, uncover the chicken and turn on the broiler for 2 to 3 minutes, monitoring closely to crisp the skin without burning.

Marinating longer enhances the flavor, try to refrigerate overnight if time allows.
