- 4 boneless skinless chicken breasts (about 6–8 oz each)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper to taste, optional
- Avocado oil or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- lettuce leaves or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- hot honey for drizzling
Instructions
- To make the garlic aioli, mix all the ingredients in a small bowl until well combined. Cover and set aside.
- Dry the chicken breasts with paper towels. Preheat the grill to medium-high heat. Combine the garlic powder, paprika, and salt in a bowl, then rub the chicken with high-heat oil and seasonings on both sides.
- Grill the chicken on the hot grill for 4-7 minutes per side until the internal temperature reaches 165°F (74°C). Allow the chicken to rest for a few minutes after grilling.
- While resting, slice the brioche buns and lightly toast them on the grill.
- Spread garlic aioli generously on the bottom half of each toasted bun, then place a grilled chicken breast on top.
- Layer with avocado slices, tomato slices, a few lettuce leaves, and two slices of crispy bacon on each sandwich. Add dill pickle slices if desired.
- Drizzle hot honey over the top of each sandwich according to your spice preference.
- Top each sandwich with the other half of the bun, then serve immediately.
Notes
For extra flavor, marinate the chicken breasts in the garlic aioli for 30 minutes before grilling.
Feel free to customize toppings based on your preference, such as adding pepper jack cheese for a spicy twist.
