- 4 ears of corn, shucked and silks removed
- ¼ cup olive oil
- 1 cup cherry or grape tomatoes, quartered
- 1 english cucumber, sliced and quartered
- ½ medium red onion, diced
- ¼ cup chopped fresh herbs (such as parsley, dill, cilantro, basil, mint, or tarragon)
- 2 tablespoons apple cider vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- optional: crumbled feta
Instructions
- Preheat the grill or grill pan to medium-high heat and lightly brush the corn with 2 tablespoons of olive oil.
- Grill the corn for about 8 to 10 minutes, rotating occasionally until charred. Once done, remove from the grill and let it cool.
- Using a sharp knife, carefully shave the kernels off the cob into a bowl.
- Add the corn kernels, tomatoes, cucumber, red onion, and fresh herbs into the bowl.
- Drizzle with the remaining 2 tablespoons of olive oil, apple cider vinegar, kosher salt, and black pepper. Mix well to combine.
- Optionally, top with crumbled feta before serving.
Notes
