- Slice the chicken breasts horizontally to create thin cutlets. Pound them to ensure even thickness.
- Season both sides of the cutlets with your chosen spice blend or Diamond Crystal kosher salt, sprinkling from a height.
- Apply a thin layer of mayonnaise on both sides of the chicken cutlets to help the seasoning adhere and keep the chicken moist.
- Heat a heavy bottomed skillet on medium-high heat until hot.
- Add the cutlets in a single layer to the skillet, cooking undisturbed for approximately 90 seconds on each side. Flip them every 30 to 60 seconds until they are nicely browned and the thickest part of the chicken reaches an internal temperature of 150–155°F. Use a meat thermometer for accuracy.
