Description

This easy No-Bake Chocolate Cherry Bourbon Balls recipe brings together delicious chocolate and tart cherries soaked in bourbon. Ingredients

  • 1 cup pitted sour cherries
  • ½ cup bourbon
  • 1 tablespoon brown sugar
  • 8 oz semi-sweet chocolate, finely chopped
  • â…“ cup heavy cream
  • 1 tablespoon unsalted butter
  • ½ cup bourbon-soaked cherries, finely chopped and well-drained
  • 12 oz dark chocolate or chocolate melting wafers
  • Crushed freeze-dried cherries (optional)
  • Flaky sea salt (optional)

Instructions

  • Soak the cherries with bourbon and brown sugar for at least 2 hours, preferably overnight; then drain and chop.
  • Make the ganache by melting chocolate with heated heavy cream and adding butter until smooth.
  • Fold in the chopped cherries into the cooled ganache, refrigerate until firm.
  • Scoop the ganache onto a baking tray, chill for 20 minutes.
  • Roll the scooped ganache into balls and chill again if necessary.
  • Melt the dark chocolate; dip each ball into it and let excess drip off.
  • Garnish with crushed cherries or sea salt, then let set until firm.

Notes

For a gluten-free version, use gluten-free chocolate.
Substitute bourbon with cherry juice for an alcohol-free treat.
Ensure the ganache is firm for easier handling when rolling into balls.
