  • ½ cup boiling water
  • ½ cup cold water
  • 1 (8-ounce tub) Cool Whip, thawed
  • 1½ cups diced seedless watermelon, blotted dry
  • 1 (9-inch) graham cracker pie crust (store-bought or homemade)
  • Watermelon slices and mint leaves, optional decoration

Instructions

  1. In a medium bowl, combine the watermelon Jell-O with ½ cup of boiling water and stir until fully dissolved.
  2. Add ½ cup of cold water and stir again. Allow it to sit at room temperature for about 10 to 15 minutes to cool.
  3. Gently fold in the thawed Cool Whip until the mixture becomes smooth and creamy. Then, add the diced watermelon gently.
  4. Pour the filling into the graham cracker crust and smooth the top with a spatula.
  5. Refrigerate the pie for at least 4 hours or until it has set firmly throughout.
