Ingredients
Scale
- 1 (3.6-ounce box) watermelon-flavored Jell-O
- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce tub) Cool Whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust (store-bought or homemade)
- Watermelon slices and mint leaves, optional decoration
Instructions
- In a medium bowl, combine the watermelon Jell-O with ½ cup of boiling water and stir until fully dissolved.
- Add ½ cup of cold water and stir again. Allow it to sit at room temperature for about 10 to 15 minutes to cool.
- Gently fold in the thawed Cool Whip until the mixture becomes smooth and creamy. Then, add the diced watermelon gently.
- Pour the filling into the graham cracker crust and smooth the top with a spatula.
- Refrigerate the pie for at least 4 hours or until it has set firmly throughout.
- Slice and serve chilled. Optionally, top with additional Cool Whip, fresh watermelon cubes, or mint leaves before serving.
- Store any leftovers covered in the refrigerator for up to 3 days; do not freeze.
Notes
For best results, cool the Jell-O mixture before folding in the Cool Whip to maintain a smooth texture.
Blotting the watermelon ensures that excess moisture does not make the pie watery.
Feel free to decorate with additional fresh fruits for a colorful presentation.
