- 2 boneless skinless chicken breasts cut in half lengthwise
- ¾ cup grated parmesan cheese divided
- ½ cup shredded provolone cheese
- 6 tablespoons unsalted butter melted and divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup panko breadcrumbs
Instructions
- Preheat a grill pan over medium-high heat.
- In a small bowl, combine 4 tablespoons melted butter, garlic powder, onion powder, salt, and pepper. Brush this mixture over each chicken breast.
- Cook the chicken breasts on the grill pan for 3-4 minutes, then flip them over.
- In a medium bowl, mix together ½ cup Parmesan cheese and provolone cheese, and set aside.
- Top each chicken breast with the cheese mixture and cook for another 3-4 minutes until the internal temperature reaches 165°F.
- Transfer the chicken to a baking sheet lined with foil.
- Preheat your oven’s broiler to high.
- In another bowl, mix panko breadcrumbs with the remaining ¼ cup Parmesan cheese and 2 tablespoons melted butter. Sprinkle over each chicken breast.
- Broil the chicken for 1-2 minutes until the breadcrumbs are golden, watching closely to prevent burning.
- Remove the chicken from the broiler and let it rest for 5 minutes before serving.
