Description

This Pasta Salad is a delightful mix of textures and flavors, featuring short pasta, creamy mozzarella, and zesty Italian dressing. It’s easy to prepare and perfect for gatherings, making it a must-have for any potluck or picnic!


Ingredients

Scale
  • 1 pound short pasta shapes such as rotini or bow ties
  • 8 ounces mini mozzarella balls halved
  • 1 pound salami chopped
  • 1 (6-oz) jar marinated artichoke hearts drained and sliced
  • 3 cups cherry tomatoes halved (about 1 ½ pints)
  • ½ cup black olives sliced
  • ¼ cup chopped sun-dried tomatoes
  • 2 tablespoons sliced fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 cups italian dressing homemade or store-bought

Instructions

  1. Cook pasta according to package directions. Drain in a colander, then immediately rinse under cold water until cooled. Drain again well.
  2. In a large bowl, combine all salad ingredients. Pour the dressing over and toss to coat evenly.
  3. Cover the salad and chill for at least 1 hour before serving.

Notes

You can add more vegetables like bell peppers or cucumbers for extra crunch.
This salad is best enjoyed chilled, so allow it to sit in the fridge before serving.
