Description

These Pumpkin Delight Cookies combine irresistible pumpkin flavor with warm spices, making them a perfect homemade treat for any occasion. They’re easy to prepare and provide a delightful bite that everyone will love!


Ingredients

  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together the pumpkin purée, 1½ cups of sugar, pumpkin pie spice, and cinnamon in a medium saucepan.
  2. In a small bowl, dissolve cornstarch in apple juice until smooth. Add this to the saucepan and whisk everything together.
  3. Cook the mixture over medium heat until it begins to boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Let it cool before using.
  4. To make the cookie dough, beat melted butter and 1 cup of sugar together in a large mixing bowl with a hand mixer until thickened for about 2–3 minutes. Mix in molasses and the egg until smooth.
  5. Add baking soda, cinnamon, pumpkin pie spice, salt, and flour to the bowl. Continue mixing until a soft dough forms, adding extra flour if needed to avoid stickiness.
  6. Chill the dough for 30 minutes. Preheat the oven to 350°F. Roll the dough to about ¼ inch thick on a floured surface and cut out cookie shapes.
  7. Create faces for the cookies by cutting out eyes and mouths from half of the cutouts using a small knife.
  8. Assemble cookies by placing tablespoon of cooled pumpkin filling on half of the cookie bases, then top with face cookies, pressing edges to seal lightly.
  9. Bake the assembled cookies on a parchment-lined sheet for 10–13 minutes, checking that the edges are cooked, especially around the face area. Cool on baking sheet before serving.

Notes

Ensure the pumpkin filling is completely cooled for the best assembly results.
If the dough is too sticky, gradually add flour until manageable.
These cookies can be stored in an airtight container for several days.
