Description

These Red, White, and Blue Tortilla Cups are a delightful treat featuring crunchy tortilla cups filled with fluffy whipped cream and topped with fresh berries. Perfect for a quick dessert or a fun party snack!


Ingredients

  • 3 small flour tortillas
  • 2 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1 tsp ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp natural sweetener like Truvia
  • 1 tsp vanilla
  • 1 cup fresh berries (blueberries, raspberries, strawberries)
  • Optional: cocoa powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine coconut oil and honey until well mixed.
  4. Brush both sides of each tortilla with the coconut oil mixture and sprinkle with cinnamon.
  5. Press three tortilla triangles into each muffin cup to form a cup shape.
  6. Bake in the oven for 15 minutes, then remove from the pan and allow to cool.
  7. In a mixing bowl, combine whipping cream, sweetener, and vanilla, then beat until small peaks form.
  8. Spoon or pipe the whipped cream into each tortilla cup.
  9. Top each cup with fresh berries.
  10. If desired, sprinkle cocoa powder on top.
