- 3 small flour tortillas
- 2 tbsp coconut oil, melted
- 1 tbsp honey
- 1 tsp ground cinnamon
- 1 cup whipping cream
- 1/2 tsp natural sweetener like Truvia
- 1 tsp vanilla
- 1 cup fresh berries (blueberries, raspberries, strawberries)
- Optional: cocoa powder
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tortillas into quarters using a pizza slicer.
- In a small bowl, combine coconut oil and honey until well mixed.
- Brush both sides of each tortilla with the coconut oil mixture and sprinkle with cinnamon.
- Press three tortilla triangles into each muffin cup to form a cup shape.
- Bake in the oven for 15 minutes, then remove from the pan and allow to cool.
- In a mixing bowl, combine whipping cream, sweetener, and vanilla, then beat until small peaks form.
- Spoon or pipe the whipped cream into each tortilla cup.
- Top each cup with fresh berries.
- If desired, sprinkle cocoa powder on top.
