  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles, drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat the oven to 400ËšF.
  2. In a bowl, mix the salt, garlic powder, cumin, and chili powder together. Season both sides of the chicken breasts with the mixture and place them flat in a large casserole dish.
  3. Drain the Rotel tomatoes and spread them evenly over the chicken breasts. Top generously with shredded cheddar cheese.
  4. Cover the dish with foil and bake for 25 minutes. After that, remove the foil and bake for an additional 5-10 minutes until the chicken reaches an internal temperature of 165ËšF.
  5. Serve warm, garnished with your choice of freshly chopped cilantro or green onions.

Notes

Ensure chicken is fully cooked to 165ËšF for safety.
Feel free to add other toppings like sliced jalapeños for a spicy twist.
