Why You’ll Love This Recipe

  • Simple & Quick: This recipe comes together in about 30 minutes, making it perfect for busy weeknights or last-minute gatherings.
  • Irresistible Flavor: The creamy basil dressing adds a richness that perfectly complements the crisp veggies.
  • Eye-Catching Appeal: The vibrant colors of the vegetables make this salad a stunning centerpiece on your dining table.
  • Flexible Serving: Enjoy it warm, at room temperature, or chilled, making it a versatile dish for any occasion.
  • Diet-Friendly Options: Plus, it can easily be made gluten-free if you choose a high-protein pasta that fits your needs!

Ingredients You’ll Need

  • 2 ears of corn, husk removed: Fresh corn lends sweetness and crunch; frozen corn can work in a pinch.
  • 1/2 pound asparagus: Tender asparagus spears contribute bright flavor and color. You could substitute with green beans if needed.
  • 1 cup snap peas: Snap peas bring a refreshing sweetness; however, you can swap them for sugar snap peas.
  • 1 cup orzo or your favorite high-protein pasta: Orzo provides a lovely texture; try quinoa pasta for a high-protein option.
  • Extra virgin olive oil: Use high-quality olive oil to enhance the vinaigrette flavor.
  • 1 bunch of chives, thinly sliced: Chives offer a mild onion flavor. Green onions can be a good alternative.
  • 2 cups arugula: This adds a gentle pepperiness; baby spinach also works well.
  • 1/4 cup pepitas: Toasted pumpkin seeds add crunch and nutrition; sunflower seeds can serve as a substitute.
  • Red pepper flakes, optional: A pinch adds warmth to the vinaigrette if you enjoy a touch of spice.
  • Kosher salt: Essential for bringing out the flavors in your ingredients.
  • 4 garlic cloves: Fresh garlic enhances the vinaigrette’s depth; garlic powder could be used in a dash.
  • 1 shallot, roughly chopped: Adds mild sweetness to the dressing; you can also use finely chopped onion.
  • 1 tbsp pepitas: For toasting and enhancing the texture.
  • 1 tsp Dijon mustard: It adds creaminess to the vinaigrette.
  • 1 tbsp white balsamic vinegar: This sweet vinegar brightens the dressing; apple cider vinegar is a good substitute.
  • 2 tsp agave syrup (optional): A touch of sweetness can balance the dressing; honey can work as an alternative.
  • Zest and juice of 1 lemon: Fresh lemon juice brings zing to the dish; lime juice can be a delightful twist.
  • 1 cup fresh basil leaves, lightly packed: Fresh basil creates the signature flavor of the dressing; if unavailable, use fresh parsley.

How to Make Spring Orzo Pasta Salad with Creamy Basil Vinaigrette

  1. Prep the Vegetables: Clean and trim your vegetables. Cut the corn kernels away from the cob and set them aside. Trim off the woody end of the asparagus (about 1-2 inches), then slice the spears into 1/4-inch pieces. Finally, trim the snap peas and slice them at a bias, removing any strings if necessary.
  2. Cook the Orzo: Bring a medium pot of water to a boil and generously salt the water. Cook the orzo until al dente according to package instructions (usually around 8-10 minutes). Drain the pasta and transfer it to a large mixing bowl.
  3. Sauté the Corn: While the orzo cooks, heat about 1 tablespoon of olive oil in a medium-sized sauté pan over medium-low heat. Add the corn, spreading the kernels across the pan. Allow the corn to cook undisturbed for about 3-4 minutes, until slightly charred. Add a generous pinch of salt, toss, and sauté for another 2 minutes. Transfer the corn to the mixing bowl with the orzo.
  4. Cook the Asparagus: In the same pan, add the asparagus along with a pinch of salt. Sauté for 3-4 minutes until the asparagus turns a brighter green. Transfer to the bowl with the orzo and corn. Add the snap peas, chives, pepitas, and arugula.
  5. Make the Vinaigrette: Return the pan to the burner, then heat 3 tablespoons of olive oil. Add garlic and shallots with a pinch of salt, sautéing for 3-4 minutes until lightly golden. Toss in the pepitas and let them toast for another 2-3 minutes.
  6. Blend the Dressing: Transfer the oil, garlic, shallots, and pumpkin seeds to a blender cup. Allow it to cool for around 5 minutes. Now, add 1 tablespoon of olive oil, Dijon mustard, white balsamic vinegar, agave syrup (if using), lemon zest and juice, and a generous pinch of salt. Blend until smooth. Add the basil and blend again until creamy. If the dressing is too thick, blend in 2 tablespoons of water. Taste and adjust salt, or add more lemon juice as required.
  7. Combine & Serve: Pour the dressing over the salad and mix everything well until fully coated. Taste again to check for seasoning and adjust with additional salt or lemon if needed. Serve immediately or chill for later. Optionally, sprinkle with red pepper flakes for a bit of heat if desired.

Storing & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. If left at room temperature, aim to consume it within 1-2 hours for freshness. For longer storage, you can freeze the salad for up to 3 months, but note that the texture may change slightly. When ready to eat, refrigerate overnight to thaw, then give it a good mix. You may want to refresh it with a bit of lemon juice if the flavors have mellowed.

Chef’s Helpful Tips

  • Avoid soggy pasta by ensuring you don’t overcook the orzo. Drain it as soon as it’s al dente.
  • If you’re making this salad ahead of time, keep the dressing separate until just before serving to maintain crunch.
  • For maximum basil flavor, use fresh leaves and avoid wilted ones.
  • To prevent the garlic from burning while sautéing, keep the pan at medium or just below that once your oil is hot.
  • This dish is a great base for adding proteins, such as grilled chicken or chickpeas, if you want to make it a hearty meal.

Spring Orzo Pasta Salad with Creamy Basil Vinaigrette is a beautiful, vibrant dish that captures the season. With a lovely medley of flavors and textures, it’s a crowd-pleaser that can work for any occasion. Perfect for family gatherings, picnics, or simply a delightful lunch, I encourage you to give this recipe a try. Take the time to enjoy and share the freshness of spring with every flavorful bite—you’ll be glad you did!
