- 2/3 cup water
- 1/2 cup sour cream
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest

- 1/4 teaspoon salt
- 2 cups cooked white rice
- 1/2 red onion, diced
- 1 avocado, diced
- 1/2 cup corn
- 2 cups romaine lettuce, chopped
- 2 roma tomatoes, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 cup black beans, rinsed and drained
- 1/2 cup shredded cheddar cheese
Instructions
- Heat a large skillet over medium heat.
- Add the ground beef and cook until browned, about 6-8 minutes. Drain any excess grease.
- Stir in the taco seasoning and 2/3 cup water. Simmer for 2-3 minutes until the sauce thickens and coats the beef.
