- 1 cup (267g) peanut butter
- 1 large egg
- 1 cup (200g) sugar
- 1 teaspoon baking soda
- ½ cup (100g) reese’s pieces
- 1 cup (136g) finely chopped reese’s peanut butter cups
Instructions
- Preheat your oven to 350°F and line two cookie sheets with Silpats or parchment paper.
- In a large bowl, combine the peanut butter, egg, sugar, and baking soda. Mix by hand or with an electric mixer.
- Once everything is well blended, fold in the Reese’s Pieces and chopped peanut butter cups.
- Scoop cookie dough onto the prepared sheets, using a 2 tablespoon cookie scoop. Gently flatten each cookie with a fork.
- Bake for 8 minutes and let cool for 15 minutes on the sheets before carefully removing them.
Notes
These cookies can be crumbly; handle them with care when transferring.
For an extra touch, mix half granulated sugar and half brown sugar for a deeper flavor.
