- ½ seedless watermelon, peeled, cut into 1-inch cubes (about 6 cups)
- 2 cups cucumber, sliced in half lengthwise, then cut into half-moon shapes
- ¼ cup chopped mint leaves (about 15 leaves)
- ¼ cup chopped basil leaves (about 15 leaves)
- ½ cup (100 g) feta cheese, crumbled
Instructions
- In a small bowl, whisk together the honey, lime juice, olive oil, and kosher salt until smooth and well combined. Set aside.
- In a large bowl, combine the watermelon, cucumber, mint, basil, and feta cheese.
