- 3 tbsp avocado, canola, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves
- 1 tsp salt
- 1/2 tsp fresh cracked black pepper
Instructions
- Grate the zucchini using a box grater and place it in a mesh bag or cheese cloth to squeeze out as much liquid as possible.
- In a mixing bowl, combine the squeezed zucchini with the remaining ingredients and mix thoroughly.
- Preheat a large cooking pan over medium heat. Once ready, add oil to the pan.
- Using an ice cream scoop, portion out the zucchini mixture and shape it into fritters before placing them in the pan.
- Cook fritters for 4-6 minutes on each side until golden brown, being careful not to disturb them until ready to flip.
Notes
Ensure to squeeze out as much moisture from the zucchini to prevent soggy fritters.
Adjust the heat as needed while cooking to evenly cook the fritters without burning.
If making multiple batches, adding more oil between them may be necessary.
